Zucchini Recipe: Summer Produce Pizza

We have a garden for many reasons. We love watching the butterflies and bees pollinating everything, having garden picnics, and honestly, I even love sitting beside the beds pulling weeds. There is something magical about the garden. I feel so much peace listening to the birds and I especially love watching the girls run around the paths between the beds. While this is all beautiful, the main reason we have a garden is to eat fresh fruit and vegetables. We picked our first zucchini and we are going to use it in one of our favorite zucchini recipes today.

When we had our first garden I struggled with the zucchini. This was back when the only zucchini recipes I used were zucchini bread recipes. I’m not exaggerating, one year I hand grated over 30 cups of zucchini for zucchini bread. I think I still have some in those zucchini shavings in the freezer somewhere bahaha! (Which is a wonderful thing to do to prepare for fall when your zucchini plants no longer produced by the way.) Regardless, you can only bake and give away so much zucchini bread before you realize you’re literally drowning in zucchini.

Zucchini Recipe

This is one of the reasons I love this zucchini recipe. I can use up some of our zucchini, it’s very simple and quick, AND it’s relatively healthy. Well, it’s much healthier than zucchini bread anyway. We found the original recipe from Oldways: Cultural Food Traditions when we first decided to eat a Mediterranean diet. Since then we have made this recipe a few times and with a few modifications turned this pizza into one of our FAVORITE summer pizzas. Our 4 years old, who is beginning to have opinions about the food in front of her, even loves this pizza!

The modifications originally occurred because we’re pretty good at opening the refrigerator and realizing we didn’t buy yellow squash at the store. But we do have zucchini growing faster than we can pick it in the garden! The other thing is, it’s summer. That means I try to use the oven as little as possible! I substitute with the grill whenever I can.

Summer Produce Pizza

This Summer pizza is quick, easy, and delicious, making it a crowd pleaser for our home!

Equipment

  • Grill

Ingredients

  • 2 Whole Wheat Naan
  • 2 ears sweet corn (husked and kernels removed)
  • goat cheese
  • 1/2 cup blueberries
  • 1 small yellow squash
  • 1 small zucchini
  • 2 tbsp Olive Oil

Instructions

  • Preheat the grill to 400F
  • Husk the sweet corn and begin cooking it
  • While corn is cooking, wash and cut zucchini and yellow squash into thin slices
  • Spread olive oil on the top of the each whole wheat naan
  • After corn is cooked, set aside to cool
  • Sprinkle each naan with the goat cheese, then zucchini and yellow squash, then blueberries evenly
  • Once the corn is cool enough to touch cut the corn kernels from the cob and sprinkle them on top of the naan
  • Transfer the pizzas to the hot grill for 5min
  • Remove from grill and top with fresh basil

I added quantities for all those people out there like my husband who believe that every recipe should be precise and exact. But for the others out there who are like me, go ahead and add as much of your favorite items as you like! Sometimes we add more blueberries and basil to the girl’s pizza and more goat cheese and squash to ours. Pizza is a wonderful food because you get to make it all your own! One of our favorite ways to do pizza is to get 4 pieces of naan and let the girls put their toppings on their own and it becomes a personal pizza.

Zucchini Recipe

Another benefit this zucchini recipe has for us is we grow nearly everything in the garden! The girls love going to pick everything that we’re going to need for the recipe, and I love watching them run out with the basket to get it!

This early in the season we are not using our own sweet corn and unfortunately, our blueberry bushes are still too small to produce enough for a pizza, walk by snacking, and the BIRDS! However, as the garden grows and as we become better gardeners I hope this changes. I’m dreaming of the days when this recipe is one we can make with our own garden goodness. Of course, that will be in late August-early September when the corn is ready!

Zucchini Recipe

This recipe is so simple, we regularly eat it in our family. The first time my husband told me about this recipe I overlooked it and moved on to the next. But lucky for us, he was persistent and made it anyway. I’m telling you, blueberries, corn, and goat cheese were made to go on pizza!! I can’t wait for you to try this zucchini recipe!
